Villon Coffee Roasters is opening a new location in Satellite Beach this August, combining a coffee shop, scratch bakery, and gastropub at 306 State Road A1A. The venue, which will operate daily from 7 a.m. to 10 p.m. (closing at 9 p.m. on Sundays), is the largest project yet for the Brevard-based company founded by Mark Quavillon. The former clothing brand expanded into coffee in 2018 and now plans to highlight local ingredients and in-house production at its new farm-to-table establishment.
The new location will feature coffee roasted at Quavillon's Fellsmere farm, including his popular banana foster lattes and milk and honey cold brews. A scratch bakery will offer items like breakfast burritos, specialty waffles, and cookies nearly the size of pizzas, with some baked goods incorporating cold brew coffee. The menu will also include sandwiches, smash burgers, and chicken wraps, with meat sourced from local butchers and farms across Brevard and Okeechobee counties.
Quavillon emphasized the focus on local sourcing, noting that even the all-beef hot dogs will be made in-house. He said the menu will include a nod to Satellite Beach's history, referencing Lums hot dogs, which were traditionally boiled in beer. 'We're gonna do a nod to the past with that,' Quavillon said, adding that the hot dogs will be prepared similarly.
The venue will also host community events and sell merchandise, continuing Villon's tradition of blending food, coffee, and local culture. The former Goombay's location will now serve as a gathering space, with plans to open daily in late August. Quavillon described the project as a way to 'bring the farm to the table' while supporting local producers and entrepreneurs.
