The location, near Viera in the Melbourne area, would mark the chain’s first foothold in the county, adding to its growing presence across Florida. The fast-casual chain, known for hand-cut chicken fingers, Texas toast, and crinkle-cut fries, has filed paperwork for a site that could open later this year.
Founded in 1996 in Baton Rouge, Louisiana, Raising Cane’s has expanded to over 40 states with more than 300 locations. The company has focused on Florida in recent years, with existing restaurants in Orlando, Tampa, and Daytona Beach. A spokesperson for the chain said the Viera location is part of a strategy to target high-traffic areas with growing populations.
The proposed site is in a commercial zone near State Road 520 and Wickham Road, an area already home to retail and dining options. Local officials have not yet commented on the project, but the permit filings indicate the restaurant is moving forward with site preparation. The chain’s menu, which includes items like the “Cane’s Sauce” and “Big Kahuna” sandwich, has drawn fans nationwide.
Raising Cane’s has faced challenges in some markets, including disputes over franchise agreements and labor issues. However, the company’s focus on a limited menu and quick service has helped it maintain steady growth. If the Viera location opens as planned, it would be the first Brevard County restaurant for the chain and the second in the Cocoa-Viera corridor, following a 2024 opening in Melbourne.
The restaurant’s arrival could boost foot traffic for nearby businesses, though no official timeline for construction or opening has been shared. Permits show the site is currently in the design phase, with no immediate plans for hiring or public events.
