PopUp Bagels will open its first Brevard County location on June 5 at The Crossings at Viera, between CAVA and Lucky Goat Coffee Company. The shop will serve its signature unsliced bagels and rotating schmear flavors. Kal Gullapalli, CEO of Built Different Brands, bought the franchise rights to PopUp Bagels in Florida north of Jupiter and plans to open at least 30 locations statewide. Tory Bartlett, CEO of PopUp Bagels, said the company expects to have 40 bagel shops in Florida within four years. The Viera location will be the first in Brevard County. The shop is known for its small, unsliced bagels meant for dipping into various schmears. Customers are encouraged to tear off a piece of the crispy, fresh-from-the-oven bagel and dip it directly into their chosen schmear. There are five bagel flavors on the menu: everything, sesame, salt, plain and poppy seed. The standard schmear options include plain, slated butter and scallion. Two rotating flavors are introduced weekly. Past flavors have included Cranberry Butter with Ocean Spray and Mac & Cheese Cream Cheese with Kraft. Bartlett said the company targeted Florida because of the growing population of northeasters moving to the state. 'We knew our customers were there,' he said. 'We thought it would be a very lucrative market.' Gullapalli said the company is focusing on finding the best real estate for new locations. The Viera shop will join at least 30 other planned locations in Florida north of Jupiter. The Crossings at Viera is a retail and restaurant complex that opened in 2022. The bagel shop will be the first in the space to serve PopUp Bagels' menu. The shop will operate from 7 a.m. to 9 p.m. daily. No specific details about employment numbers or menu prices were provided in the announcement.
