PopUp Bagels opened its first Brevard County location on Friday, June 5 at The Crossings at Viera, 2105 Viera Blvd. The shop joins a growing list of food spots in the Viera Village area, which has seen a surge in dining options over the past year. The new location is between CAVA and Lucky Goat Coffee Company, a spot Kal Gullapalli, PopUp Bagels partner and CEO of Built Different Brands, described as "prime real estate" in a USA Today Network interview last month.
The bagel shop is known for its small, unsliced bagels meant for dipping into schmears. Customers tear pieces off the fresh-from-the-oven bagels and dip them directly into spreads. Five bagel flavors are available: everything, sesame, salt, plain and poppy seed. Standard schmear options include plain, slated butter and scallion, with two new flavors added weekly. Recent rotating options have included Cranberry Butter with Ocean Spray and Mac & Cheese Cream Cheese with Kraft.
The Viera location is part of a statewide expansion plan. Gullapalli purchased franchise rights to PopUp Bagels in Florida in 2025 and aims to open at least 30 locations across the state. The Viera shop is the first in Brevard, with others expected in Tampa, Orlando and Miami-Dade by year’s end. "We’re just trying to find the best real estate," Gullapalli said last month, noting the brand’s popularity has led to long lines at existing locations.
The shop’s grand opening drew crowds early on June 5, with lines forming before 9 a.m. The Crossings at Viera, which opened in 2023, now hosts its fourth food-related business in the past 18 months. Amber Olesen, FLORIDA TODAY’s food and dining reporter, said the expansion reflects Brevard’s growing appetite for specialty food concepts. "It’s a sign of how the local market is evolving," she said. "More people are seeking out unique dining experiences."
