Chef Laurent Carillon, who trained in France starting at age 15, designed the menu to highlight fresh, traditional French flavors with inventive twists. He describes the beignet as a standout, calling it lighter than the New Orleans-style version most Americans know.
The cafe operates as a quick-service spot, allowing customers to take pastries to go, sit inside, or relax on an outdoor terrace with ocean views. Prices are set to encourage regular visits rather than special-occasion spending. Initially open from 9 a.m. to 5 p.m., the cafe plans to expand hours as staffing allows. Carillon also hopes to add Friday and Saturday evening date nights, featuring interactive cooking experiences where guests can participate before dining.
Carillon’s culinary background includes formal certifications in baking, cooking, butchery, and high-end catering. He left the French army for seasonal work and eventually moved to Florida. The cafe’s menu includes pain au chocolat and other pastries with fillings inspired by his travels. The concept emphasizes accessibility and community, with no pretensions of being a high-end destination.
The cafe’s expansion plans include evening events, but for now, it focuses on daytime service. Carillon said the goal is to provide a casual space where locals can grab a pastry or coffee without feeling rushed. The location on South Orlando Avenue is near the beach, drawing both residents and visitors. The cafe has no immediate plans for additional locations, but Carillon said he wants to see how the Cocoa Beach community responds before considering growth.
