Walls are covered in framed photos from regulars, and soft lighting creates a warm, intimate atmosphere. 'It’s less polished chain, more personal hideaway,' Wollard said.
Dolly’s offers more than 150 wines by the glass, with a focus on small producers from around the world. Regulars praise the staff’s knowledge and the bar’s ability to balance sophistication with approachability. 'We wanted people to feel comfortable here,' Wollard added. 'It’s about memorable pours and great company.'
