Big Dog Kombucha has opened a new 7,000-square-foot brewing facility and taproom at 127 N. Tropical Trail on Merritt Island. The business, owned by Gerhard and Juli Claassen, uses fresh fruit and local raw honey in its kombucha. The new location allows customers to view the brewing process from the taproom.
The Claassens, who launched the company in 2019, say the expansion is about connecting customers to the brewing process. Stainless steel tanks line the facility, similar to those in craft breweries but filled with kombucha instead of beer. The taproom, open 9 a.m. to 9 p.m. Monday through Saturday, overlooks the production floor.
Gerhard Claassen discovered kombucha by accident, Juli said. He started making his own at home to improve the vinegary drink sold in stores. Using natural flavorings like fresh fruit and raw honey, Big Dog Kombucha was born. The company now distributes its products to multiple retailers and restaurants across Brevard County and Florida.
The new facility on Merritt Island is the company’s first in the county. It’s also the first time customers can see the brewing process in action. The Claassens say the expansion allows them to showcase their commitment to local ingredients and transparent production.
The taproom is closed Sundays. The Claassens plan to host events in the space, though no specific dates have been announced. The facility’s opening comes as kombucha continues to grow in popularity as a health-focused alternative to traditional drinks.
