A new Italian-style bakery, Baked by Chelle, will open by late May at 2002 S. Harbor City Blvd. in downtown Melbourne. The bakery will serve Italian pastries, wedding cakes, and New York-style baked goods using imported Italian ingredients. Owner Michelle Franzen plans to use finely milled '00 flour' and avoid artificial extracts. The target opening date is late May, with initial hours from 10 a.m. to 5 p.m. Tuesday through Saturday, though hours may change. Franzen, a Long Island native with Italian heritage, brings decades of culinary experience to the Space Coast. She was trained at Le Cordon Bleu and previously worked at Amici’s Italian Bakery in Suntree. 'My pastries are not as sweet, but they are extremely flavorful and delicious,' Franzen said. 'I love to make pastries that you can eat the entire pastry without feeling guilty.' The bakery will use clean ingredients like pure almond and pistachio pastes. Franzen’s resume includes roles as a culinary manager, executive pastry chef, and sous chef. The new location adds a European touch to downtown Melbourne’s growing food scene. Baked by Chelle’s menu will focus on traditional techniques and high-quality imported ingredients. The bakery’s opening follows recent restaurant expansions in the area, including a new seafood market and a craft beer bar. Franzen said she aims to create a space that feels both familiar and new to local diners. 'I want people to taste the difference between real ingredients and mass-produced ones,' she said. The bakery will operate out of a 1,200-square-foot space that previously housed a boutique. Construction is underway, with final permits expected by early May.
