A La Vie Cafe will open in Cocoa Beach on May 3 at 1 S. Orlando Ave., according to chef Laurent Carillon. The cafe will serve traditional French pastries like croissants and pain au chocolat, with some items featuring unique fillings inspired by Carillon's travels. The menu will also include a lighter version of French beignets, distinct from New Orleans-style versions.
Carillon, who trained in France starting at age 15, has worked in baking, cooking, and high-end catering. He left the French army in 2010 and has since worked in seasonal roles across Europe before moving to Florida. The cafe will operate initially from 9 a.m. to 5 p.m., with plans to expand hours as staffing allows.
The cafe will have a relaxed, beach-friendly atmosphere with outdoor seating on a terrace. Prices will be set to encourage regular visits rather than special occasions. Carillon said he wants the space to feel accessible and community-focused.
Future plans include Friday and Saturday evening date nights with interactive cooking experiences. Guests will participate in hands-on sessions before dining. The cafe's first week of operations will focus on pastries, with plans to add more items later. Carillon said he aims to bring authentic French flavors to Cocoa Beach without the formality of traditional French restaurants.
