Owners Erika and Brock Wollard credit the bar's success to its unique ambiance and focus on wine. The space features vintage art and colored windows that give it a 'Wes Anderson' aesthetic during the day. On a recent Thursday night, DJ Placebo FX played vinyl to a full house, drawing a mix of regulars and newcomers.
The bar's menu includes creative cocktails like the Vermut Spritz, crafted by bartender Sophia Rahal. Rahal said the team aims to make every guest feel welcome whether they're stopping in for a quick drink or staying for dinner. 'We want it to be a place people can relax,' she said. The bar serves a rotating selection of wines by the glass and bottle, with a focus on small producers from around the world.
Located at 1234 Eau Gallie Avenue, the bar is part of the growing arts district that has seen a surge in restaurants and galleries in recent years. The Wollards opened Dolly's after spending two years renovating a former retail space. 'We wanted to create something that felt special but still approachable,' Erika Wollard said. The bar has already hosted events with local musicians and artists since opening.
Dolly's joins a list of 50 bars nationwide recognized by USA TODAY for their service, ambiance, and drink quality. The honor comes as the Eau Gallie Arts District continues to attract visitors looking for unique dining and entertainment options. 'It's validation for the work we've done here,' Brock Wollard said. 'But really, it's just the beginning.'
