Mediterranean fast-casual chain CAVA will open its Viera location on April 17 at The Crossings at Viera, 2105 Viera Blvd. The restaurant will operate daily from 10:30 a.m. to 10 p.m. and is expected to hire between 25 and 40 local employees. The new location joins 11 other CAVA restaurants in Florida, with the chain planning to open 15 more in the state this year.
The menu features customizable bowls and pitas with options like grilled chicken, braised lamb, falafel, and roasted vegetables. Diners can add spreads such as hummus, harissa, and tzatziki, along with pickled vegetables and fresh toppings. A signature item is the Azzi's Game Day bowl, which includes harissa honey chicken, sweet potatoes, red pepper hummus, tzatziki, feta, pickled onions, tomatoes, cucumbers, pita crisps, power greens, and rice.
The restaurant will offer competitive pay, paid time off, healthcare, and employee assistance resources. CAVA, which was founded in 2006 as CAVA Mezze in Washington, D.C., expanded into the fast-casual space in 2011. The Viera location is the first CAVA in Brevard County.
The restaurant is expected to draw customers from nearby communities, including Melbourne, Palm Bay, and Cocoa. Local residents have expressed interest in the job opportunities, with some saying the restaurant fills a gap for healthy, affordable meal options in the area. The opening comes as Brevard County continues to see growth in the food and beverage sector.
